Chicken Vindaloo on a lazy saturday

When I came to NZ last year, the most common perception towards indian cuisine could be summarized in 2 dishes : butter chicken and chicken vindaloo.. It surprised me but at the same time it was frustrating trying to explain that there is more to the indian cuisine than just those two dishes. Butter Chicken is essentially a north indian dish, which is very popular in india {and apparently in rest of the world as well} but I have a preference for chicken korma or mughlai chicken or anything which is cooked in true mughlai style - over slow fire over an extended period of time, which gives the meat the taste by letting it absorb the spices better. {Brings in memories of chicken quorma purchased from Karim's, located near Red Fort in Delhi}. While I had never heard of Chicken Vindaloo till I actually came to NZ. It took me a couple of months before first tasting it and finding out that it was a goan dish.

While walking across the aisles of the supermarket, I thought i would cook myself some chicken vindaloo this time and bought readymade paste for it....I came home and got to the task straight away and boy...it was good -the first time in NZ that I tasted something really hot. At any indian restaurant I had been to here in Auckland, the dishes are at the max mild {if the menu says hot}, so it was almost a certain pleasure sweating while eating the hot dish. I think i do really enjoy cooking - you prepare all your ingredients and then go about experimenting -trying to get to a taste which you would like, something which might or might not happen. The only thing about cooking is that it also takes a lot of time and I wonder if we would still be cooking in 10-15 years from now as the pace of the world keeps increasing.

Dropped into school in the afternoon briefly to check that things were fine in post production. I also had a brief chat with gerben and caught up with him about my efforts for trying to sell the movie and the impending post production task ahead. Gerben is equally excited about Benji editing the project and has endorsed the view that having fresh eyes and personality will add to the projects life.

I got out a couple of DVD's - 'Lost in La Mancha' and 'Swimming Pool'..so i better go and watch them..will update you on what I feel about them maybe tomorrow.
